Vin Santo Bianco dell’Empolese DOC

A stunning sweet wine that is traditionally offered in Tuscany to welcome guests. Vin Santo or “holy wine” is the definition of “slow wine”; following hand picked harvesting, the grapes are dried on mats in the loft of the winery for 4 months. Following soft pressing, the juice is naturally fermented in old barrels known as caratelli that are made of a mix of chestnut, oak, cherry, acacia and mulberry wood. The wine is left to ferment in the caratelli for at least 5 years and only when the time is right, the wine is bottled where it rests for at least 6 months, although commonly left in the bottle to further develop for decades.

The vintage we have selected for you is the 2009 which although has only had 7 years in the bottle is an absolute beauty and given 93 points by the internationally acclaimed wine critic James Suckling. The colour is a rich tawny but the first thing that hits you is the amazing aromas of dried fig and caramel. The flavours of intense dried figs, apricot and caramel coat your palate that linger on for a long time, allowing you to savour every delicious drop. Drink as the Tuscans do on its own as an aperitif or as an after dinner treat with cantucci biscuits for dipping.
