Calypso Palava Passito IGT Veneto

A great addition to our dessert wine list. It’s an absolutely stunning dessert wine from our new award-winning producer, Le Carezze.  Made from PIWI Palava grapes that are dried (appassimento) for 3 months before gently pressing. The juice is fermented in temperature-controlled tanks for 2 months before stopping fermentation early to maintain the residual sweetness.

This wine has dried apricot and floral aromas followed by a big hit of soft tropical fruits. It’s not cloyingly sweet like many dessert wines but has a clean and long-lasting finish. It’s a perfect match for Christmas pudding and minced pies but also works well with rich chocolate cake and desserts. For something lighter, pair it with almond or pistachio cream pastries or with strong cheese.
