Urano Cabernet “Volos” IGT Veneto

This is a powerful, full-bodied red wine from our new award-winning producer, Le Carezze made from PIWI Cabernet Volos grapes, a grafted vine plant from its parent Cabernet Sauvignon.  The grapes are dried (appassimento) for 1 month to lose weight and increase the concentration of sugar, aromas, and structure before gently pressing. The juice is fermented for 40 days at 18˚C, then transferred to American oak barriques for 4 to 6 months before bottling.

This is a classic “Left Bank” Bordeaux-style wine with great structure and complexity. Although still young, it already has aromas of leather, tobacco and liquorice that are typical of 1^st growth Bordelaise wines. The taste is intense blackberry fruit with a hint of vanilla and a good tannic structure that will soften and develop in the next few years. Drink with roast dinner, red meats or cheeseboard
